Sillage's small dish, "sustainable paste"


At Shirokane Takanawa's modern bistronomy restaurant, Sillage, chef Munesada carefully uses seasonal vegetables delivered from his hometown of Okayama, regardless of their shape.


Some of the vegetables used in cooking may be slightly crooked or irregular in size, and are considered "non-standard" in the market. However, they still retain the same vitality and fragrance.


We don't let these vegetables go to waste, but instead use the power of fermentation to bring out new flavors and offer them as a sustainable paste.

This paste, served with homemade baguette, is a dish that symbolizes Sillage's commitment.

That's why, even at dinner, we deliberately list this paste along with baguette on the menu.
