On Thursday, January 15th, 2026, Sillage will be holding the "Sillage × HOLON Gin Pairing Dinner" in collaboration with craft gin brand HOLON.



On the day, we will welcome HOLON representative Rei Horie and enjoy a one-night-only pairing dinner featuring Sillage cuisine and HOLON gin.


HOLON -DRINKING AS MEDITATION-


HOLON was founded with the desire to deliver the charm of Eastern philosophy in the form of a food experience that anyone can enjoy, and offers the world an appealing craft gin that balances the mind and body and creates harmony.

A variety of craft gins that are carefully designed to have a rich aroma and depth, combining oriental herbs, spices, and various botanicals.


The aroma, complexity, power of the ingredients, harmony, and lingering aftertaste... The appeal of HOLON craft gin resonates deeply with the philosophy that Sillage Chef Munesada values in his cooking: "Listen to the voice of the ingredients and create a dish that is fragrant and memorable."



About this collaboration


For this pairing dinner, we will not be bound by the framework of classic pairings, but will aim to achieve a harmony that will allow the aroma and aftertaste of the food and gin to resonate with each other.


It's like you can relax a little and enjoy the conversation and the flow of time.

I hope that you will be able to experience this perfect balance between the individual and the whole through our food and craft gin.


On the day, HOLON representative Rei Horie will be visiting the store and will talk directly about the thoughts behind the brand and the design philosophy behind the fragrance.


We will also be offering cocktails using HOLON gin, created by KiLiG bartender Miyuki Isoguchi.


At the restaurant named "Sillage" (meaning "lingering aroma"),

Fermentation, botanicals, and crafts - we will be offering a one-night-only experience where aromas with their own backgrounds overlap.


HOLON Representative: Rei Horie

He traveled to Dharamsala, India as a student and developed an interest in Eastern philosophy, which led him to work at Google Japan, where he provides in-house training based on mindfulness.

After being involved in the launch of Tokyo Riverside Distillery, he founded the craft gin brand HOLON, which develops beverages blended with oriental plants, focusing on natural philosophy, luxury goods, and fragrance culture, with the theme of "DRINKING AS MEDITATION."


KiLiG Bartender: Miyuki Isoguchi

He studied under master bartender Tsuneaki Kusama at a long-established bar in Ginza. In 2018, he won three cocktail competitions both in Japan and overseas. In 2020, he went independent as "KiLiG". He currently works as a freelance bartender, overseeing drinks at bars and organizing a wide range of pairing events. He is renowned for his meticulous cocktail designs that bring out the flavor and aroma of the ingredients.

Reservations open: December 24th, 2025 (Wednesday) 10:00

Applications will be accepted via Sillage's TableCheck (planned)


Price: ¥16,000 per person (excluding tax, 5% service charge, and pairing)

Capacity: Reservation required , limited to approximately 30 seats

Venue: Sillage (Shirokane Takanawa)
